What I'm eating

  • Friday lunch: rye bread sandwich with inches of baby spinach, mushrooms, cheese, artichoke hearts
  • Thursday afternoon: eating an apple and some seed filled crackers
  • Thursday lunch: the final leftover soy bombs, with a big pile of rocket leaves & some tahini dressing.
  • Tues lunch with my parents. Pide bread sandwich with avocado, pesto, greens & fetta. Positively delicious. And a coffee.
  • Tuesday breakfast: kamut toast (from Sonoma) with tahini and mum's home-made plum jam

It seems I’ve been a day late with everything this week. Including Friday’s Quicklinks . . . which I’m posting today, Saturday.

Also a warning – I’m going to be off air over the next week. We are moving and in a moment of very poorly timed clumsiness, I’ve fractured my ankle. So I’m in plaster and on crutches.

All of which means the logistics of working, moving and getting around, are going to pre-occupy me for at least the next seven days.

Anyway, here are this week’s Quicklinks:

  • Recipe search: Heidi from the wondrous 101 Cookbooks has launched a marvellous thing – a Super Natural Recipe Search Engine. Not only does it feature many fine, fine recipes, but Heidi has also hand-picked them – to be healthy, full of wholefood ingredients and vegetarian or vegan. It’s a growing and splendid resource.
  • Coffee chilli beans: I’m intrigued by Cassie from Veggie Meal Plan’s recipe for chilli beans with coffee. Onions, garlic, chilli powder, tomatoes, beans, fresh coriander and . . . freshly brewed coffee. I have to try this.
  • Cauliflower & chickpea salad: Lovely flexible salad from Christie of Fig & Cherry fame. It’s a brilliant example of what can be done with leftovers. As Christie says “This salad was born because I looked in the fridge one day and saw half a cauliflower, a week old tub of hummous and some almost stale pita bread sitting in there.”
  • Don’t waste salad: On a similar topic, The Frugal Cook has written a post on ways to stop wasting food. It starts with the terrible statistic that “Britain imports twice as much salad as it actually eats. The rest gets thrown away.”
  • Eating well on a budget: I can’t remember who first pointed me to this article (was it you Sophie?) – but Gristmill serves up some advice about eating good food and making green choices on a budget
  • Sweet potato & lentil curry: I liked the simplicity of Becky’s curry on Girl Interrupted Eating. The ingredients are onion, garlic, sweet potato, red lentils, tinned tomatoes, plus some stock and spices. Delicious.

Thanks all. I am looking forward to being in our new house. And the ankle thing is a pain in the butt, however we just have to make the best of it. Does give me an excuse to sort through all the paperwork, magazines and research materials I have – something I can do from the couch!

Interesting how well publicised food waste is in Britain. There’s a great website http://www.lovefoodhatewaste.com/ The best tip I got from there was actually for deodorising your fridge with a saucer of bicarb-soda.

Thanks to you all and yes it has been a long, long absence – much longer than expected. I’m back now, put up some Quicklinks today and will be normal blogging from next week.
