  • Thursday. Lunch was a slice of toast, with tapenade & tempeh, slices tomato & cucumber, plus a big bowl of greenery http://ow.ly/1gUVZ

  • Friday. Leftover bits & pieces lunch: corn fritters again (definitely the last time), watercress & broccoli soup & some fruit
  • Friday. Breakfast: two leftover corn fritters with a poached egg on top & a tomato sliced on the side.

Zucchini fritters

Fritters are a great way to make vegetables a bit different. If you struggle to get your daily vegetable quota, or find it impossible to get your kids to eat vegies, then fritters are a good option. They don’t really look or taste like vegetables and don’t have an obvious vegetable texture. They can be “sold” to kids as burgers, something all kids recognise (certainly in Australia). December: what's in season?

December is here already, which means we’re well into the summer fruit season. Bananas are definitely coming down in price, while they seem to be averaging $8.99 – $9.99 a kilo, I did buy some for $4.99 / kg last week! Balsamic, tomato & goat's cheese bites

Now to the dinner party recipes. I knew everyone would be hungry when they arrived, having come directly from work, so I thought a couple of canapes would be a good idea – just enough to take the edge off the hunger. Mini herb frittatas with onion marmalade

While the photo is not brilliant, these were really good – little bite sized morsels packed full of flavour. Berry and mango pavlova

I’ve got a few unfinished blogging strands at the moment, including the dessert from this dinner party. Hot weather and rice paper rolls

Indian-style Scrambled Eggs

This is my current favourite breakfast – Indian-style scrambled eggs on toast. It’s something I’ve gradually adapted from a Madhur Jaffrey recipe. Step-by-step making it a little easier and a little more suited to my tastes. If I get up early to exercise, this is what I have when I get back.
