An Honest Kitchen

What I'm eating

  • Saturday. Iku lunch today: tofu burger w/ steamed veg, pickled red cabbage & beetroot, & chickpea w/ beetroot. Plus they're amazing dressing
  • Thurs late lunch: Pad Thai with tofu and double the vegetables.
  • Hungry all morning & knew lunch was going to be late. Had half a tin of white beans, a banana, a peach & square of Beetrotinger cake.
  • Thurs breakfast: rye and pumpkin seed toast again. One w/ white bean paste / dip & t'other w/ marmalade. Plus some pineapple.
  • Made kind of polenta pie for Tues dinner. Polenta top & bottom, w/ filling of lentils & silverbeet cooked in tomato.Topped w/ cheese & baked

About

Hello and welcome to Limes and Lycopene. I’m Kathryn Elliott, a nutritionist and freelance food and cookery writer. I live in the inner west of Sydney, Australia, with my partner, Richard and our cat, Trilby.

I see clients privately at a clinic in Gladesville, where I also run cooking classes and regular weight loss groups.

I’m also a food and cookery writer, whose clients include Reader’s Digest, Wellbeing and The Private Practice. For three years I wrote a regular recipe column called Ten Minute Kitchen for Life etc magazine. I’m the Nutrition Editor for HealthSmart and I write The Everyday Kitchen column and blog for Reader’s Digest.

I am also the co-author of An Honest Kitchen, with Melbourne based photographer and writer Lucinda Dodds. An Honest Kitchen is an occasional e-magazine about real food that’s good for you. It includes recipes for meals that are balanced, made up of ingredients that improve health and served in realistic portions. To find out more click here.

My life revolves around food – both professionally and personally. I spend my clinic days working with individuals, encouraging and prodding them to eat well; problem solving, motivating and coaching. Other days are spent writing about food – why you should eat well, what to eat and how to do it. And at the end of the day, I relax and recharge through cooking. Food that nourishes and nurtures.

I’m continually blown away by the flavour and possibilities of vegetables and have a mild obsession with beetroot. My favourite cookery book of all time is a (now) food splattered old paperback edition, by Madhur Jaffrey. It contains no photos, no styling and no glamour. Instead, it’s full of amazing and astounding food.

About Limes & Lycopene

Limes and Lycopene is all about food, health and how to eat well.

While there’s a glut of information about what you should be eating to be healthy, lose weight and have plenty of energy. It’s the practicalities of how you actually do this that most people struggle with. If you’re busy, work long hours and are not an experienced cook, how do you buy, prepare and eat the best food for you?

If your response to most healthy eating advice is “just tell me what to eat” then Limes and Lycopene is for you. This site is not for hard-core nutrition nuts, instead it’s for everyday people who are struggling to eat well. I’m not a dietary zealot and I think the perfect diet is a myth. Personally I enjoy a bit of chocolate, a glass of wine and love pizza, although I prefer to make these occasional foods rather than everyday choices.

While I might occasionally write about a nutrition concept or current health topic, I mostly concentrate on actual food – how to buy it, cook it and eat it. I have a particular focus on vegetables, because most people don’t eat anywhere near enough.
